Ratatouille
Ingredients
- 1 large onion chopped
- 1 tsp. garlic chopped
- 2 Tbls. olive oil
- Salt & pepper to taste
- 3 small eggplant
- 1 medium bell pepper
- 3 small zucchini
- 2 cups fresh tomatoes chopped
- 1 tsp. basil
- 1 tsp. oregano
- 1 1/2 tsp. paprika
Instructions
Saute the onions and garlic in olive oil. Season with salt and pepper.
Cube the eggplant, zucchini and green pepper and add to onions. Add cauliflower and string beans. Cook vegetables until tender.
Add the tomatoes, basil, oregano and paprika and cook on low for 5 to 10 minutes.
Serve over rice, pasta, grilled polenta or with a loaf of fresh bread to soak up the juices.
