Peppers with Rice & Cilantro
Ingredients
- 4 green bell peppers
- 2 tomatoes
- Black beans
- 1 onion
- 2 cloves garlic, minced
- 1/2 jalapeno, minced (optional)
- Cooked rice, brown or white
- Monterey Jack cheese, shredded
- Sour cream, optional
- Cilantro
Instructions
Halve and seed peppers, quarter tomatoes. Toss both in olive oil, spread on cookie sheet (without crowding) and roast at 375 degrees until tender Chop and sautée onion, garlic and hot pepper, stir in rice and black beans and add salt to taste. On a beautiful platter place peppers and tomatoes, Pile rice mixture in middle, lay cheese on that, dollop of optional sour cream and a good handful of chopped cilantro.
